Traditional burgers usually consist of a few things: a bun, toppings, and condiments all centered around a beef or turkey patty made up of ground meat. It's this last part that Bisbrooke Ostrich Farm is challenging, replacing the traditional types of meat with ostrich. Visitors to Cambridge can get one of these delicious burgers in Market Square, which is open Monday - Sunday 10 am to 4 pm (although on Sundays, the market is generally more "arts and crafts" themed). Along the many rows of the market, which boast booths featuring traditional food from all over the world, is Bisbrooke Ostrich Farm's stall. Although sausages and other ostrich products are available, the most popular is the ostrich burger, which can come with or without cheese and caramelized onions. The sign says that the burgers are "low fat", as if there needed to be another reason to buy one.
For those who haven't had it before, ostrich has a really interesting flavor, which is only heightened by being made into a patty. It's kind of a strange mixture of chicken and beef, with most of the taste of beef and the leanness of chicken (which is where the "low fat" comes from). Bisbrooke Farm turns this semi-exotic meat into a delicious burger, which I highly recommend.
Next time you're in Cambridge (or any other place that happens to sell ostrich burgers), turn your idea of a traditional burger on its head and put some bird on that burger.
